10 or 20 XP is HUGE! I wrote a report on all my adventures in SW RPG because it earned me +1 XP (OK, and I love seeing my own words)!
Since damage is dealt with by saying "Roll your Health Dice(+ Armour, if you have any) and try to beat the incoming damage", you can judge how deadly an encounter will be by seeing if the attacking dice are greater than the party's health dice (which means Light Sabre combat is always deadly dangerous - it starts at 5d damage).
For judging challenge levels, it's worth remembering that 2d averages at 7, 3d at 10.5 and 4d at 14 (and 6d at 21) and your base ability for anything you've put at least 1d in (basic competence) would be about 4d (assuming you have the average base stat of 3d) for a rough idea of how hard it will be to make a challenge roll.

Personally I wouldn't worry about paying attention to canon. It's not like the movies do!
The Mandalore arc, mainly. The idea was he'd be a Battle Droid equipped with an HK47 chip that would sometimes send him into homicidal rages. I decided the chip had been planted by Black Sun, and he was a sleeper agent meant to assassinate the Mandalore and help Black Sun get control over the planet. Originally, had he appeared in the first chapters, the Black Sun connection would've been a surprise. Had he been available for the second session, he would've been introduced as Kehr Steen's accomplice, added to the team, and already in on the secret mission. I didn't try to rework him into the third session recording, because I figured it was too late plot-wise.
